How to shop and stock your pantry with cheap, healthy recipe foods

When the economy is stable, food prices don’t fluctuate too much, from month to month. So we get used to living on the same food budget. These days, it’s hard to know what to expect in food costs from week to week. Now, you might run through your allocated monthly food budget within 3 weeks. It’s clear that a new strategy and better organization is called for, if you hope to make the food money last. Here we’ve got several ideas for cheap, healthy recipes that are also tempting to your family.

Every cook has a repertoire of favorite recipes. During flusher times, you may not have been so concerned about the cost of serving a good rib-eye a couple of times a month. Just a few years ago, you could get a nice, good-sized juicy rib-eye for about $6-7. A nice treat that didn’t break the budget. On a recent shopping trip, I checked out the steaks and was absolutely shocked to see that a decent sized rib-eye steak will now set me back $13-16! This set me thinking about how I could serve tasty, cheap, healthy recipes more often than not, so I wouldn’t run out of food money!

Broiling up a nice steak makes you feel that you’re enjoying a well-deserved treat that everyone loves. However, it’s harder to justify the price. One beef cut that is still relatively cheap is the good old chuck roast. Prepared correctly, that chuck roast is fork tender and actually has more flavor than the steak. You may think this is the glass-half-full mentality. You’re right! Why not? Chop up a couple of onions, a few carrots, some beef broth, season with thyme and toss this hefty wonder in the slow cooker. Bake some potato wedges in the oven, seasoned with fresh rosemary. Warm some bread and you’ve got a cheap, healthy recipe for half the price, with leftovers! Add some gravy made with the broth and everyone’s in heaven.

The point here is to look over your current stock of recipes and look for ways you can substitute some less pricey ingredients for spendy ones, without sacrificing taste.

Another strategy for devising cheap, healthy recipes that please the taste buds is to stock your pantry with staples, such as rice and whole-grain pastas which can serve as a delicious base for an array of one-dish meals that offer variety, nutrition and good taste. Stock up on sale items and freeze, as your freezer space allows. For example, it’s far cheaper to buy one of those ten-pound bags of chicken hindquarters and freeze in dinner sized portions, than it is to buy the smaller packs of legs or thighs. The same goes for beef. Buy in quantity, when the item is on sale.

All cheap, healthy recipes have a few basic components in common: simple ingredients, combined with small amounts of a colorful variety of produce, bits of meat – or tofu – and the right seasonings. If you haven’t got a handle on seasonings, go online, or to the library and get up to speed. You’ll be amazed at the magic a good seasoning mix can confer on the most ordinary of ingredients.

Produce has become quite expensive too, but you can still serve produce, economically, in adequate quantities. Always watch the sales! Mushrooms, bell peppers, zucchini, broccoli and carrots all freeze well. Stock up when they’re in season and spend a couple of hours slicing and dicing. Flash freeze the mushrooms on a baking sheet. For the rest, fill meal-sized freezer bags about one third full of water with a dash of lemon juice, then pile in the veggies.

Serving tasty, cheap, healthy recipes is easy, with the right shopping and storing methods. You’ll soon have that food budget tamed!

You might have a caught a few episodes of Rachael Ray’s “30 Minute Meals” if you’re a fan of the Food Network. Each episode, Rachael Ray shows us how to prepare a quick meal often using ingredients that are commonly found in the kitchen. Some of her quick meal recipes include steakhouse chili, double mushroom and marsala cream fettuccine, and salmon fillets with dill couscous and spicy kale. It’s no surprise that the concept of delicious meals prepared easily in a short amount of time appeals to the audience, especially in a day and age where people are strapped for time and constantly on the go. Fortunately Rachael Ray and her quick meal recipes are here to save you time and satisfy your appetite—tune in and snag a recipe or two. Another great thing about these quick meals is that often they can be prepared shortly and last a long time. Some recipes make enough of a batch that the leftovers can be stored in the freezer and eaten for rest of the week. That’s a lot of time saved throughout the course of 7 days.

But are quick meal recipes too good to be true? Like anything that’s subject to judgment, “30 Minute Meals” has its critics. Some say that in reality, these meals can’t be completed in half an hour, because like any other TV program it gets interrupted by commercial breaks during which Rachael Ray does some cooking and preparation that we don’t see. While Rachael Ray is filmed cooking live, she can potentially do extra work while the camera isn’t filming, making the actual cooking time longer while the broadcasted program still adheres to its half hour schedule. Others complain that the allegedly easy to find in the kitchen ingredients aren’t always so available. For example, dill couscous and spicy kale aren’t items that are prevalent throughout households. Perhaps “30 Minute Meals” is targeted to a limited demographic.

“30 Minute Meals” might have its shortcomings, but no one can argue that Rachael Ray’s quick meal recipes aren’t better than the other kind of quick meal that you take out of the freezer and pop into the microwave. Good cooking always takes some effort, and the food you make is as good as the time you put into it. Inevitably you have to sacrifice quality with a less quantity of time, but Rachael Ray does a reasonably good job of making cooking simple and easy.

Sliced mushrooms, broccoli and cauliflower florets, celery sticks, wedges of red and yellow bell peppers and carrot sticks make a tempting plate. Offer a few different types of dips, ‘labeling’ them with a place card in front of each.

4. Deviled eggs are a holiday favorite. Here’s a neat trick for this Christmas party recipe that keeps the yolks looking fresh throughout the party. When you’ve separated the yolks, add just a small amount of lemon juice to the bowl of yolks, before you add the mayonnaise. This dish tends to disappear fast, so preparing a dozen eggs, for 24 halves, isn’t overdoing it!

5. Smaller plates of hors d’oeuvre, with such delicacies as marinated artichoke hearts, marinated mushrooms and smoked salmon provides tidbits of rich taste to complement one of those rolls or a chunk of Teleme cheese.

6. Ah, the sweets! (You thought I’d never get to this end of your Christmas party recipes.) If you enjoy baking, that’s one thing. On the other hand, there are so many ready-made, fabulously decorated confections at the bakery, it’s hardly worth your time to bake them yourself. For any diabetic guests on your list, have a bowl of assorted Splenda(TM)-only candies, marked as such with a ‘place card’.

7. Last, but not least, you’ll want to have some choices in wines. When it comes to wines, people usually have a preference, between sweet, fruity wines and dry wines. If you’re unfamiliar with wines, ask a wine merchant for advice.
